Airlock was started in Baltimore in 2024 by Jeff Harris. We offer a variety of items that are freeze dried, which preserves the taste and nutrients of fresh foods and turns regular sweet treats into new, exciting tastes and textures.
Some of our favorite foods to freeze dry are fruits and berries, veggies for our ramen jars, and candies. Our Caramel Supernovas, Cheesecake Chips, and Fruit and Cream Bites will amaze your taste buds!
Food is loaded into a special machine that cools down to as low as -20 degrees. Once the food is completely frozen, the machine uses an air pump to create a vacuum in the machine and heats up to about 130 degrees. This process removes all moisture from the food, allowing the food to remain shelf stable for much longer than it normally would and sometimes transforming the taste and texture of the food.
